Mostly,\u00a0we focused on feeling grown up and independent. \u00a0This friend had just broken up with a Turkish boyfriend whose positive attribute\u00a0was that he had taught her how to make ginger tea. Once we had finished our meal, she showed me his technique and we thought it was exotic and delicious. \u00a0I have since fiddled with the very simple recipe and although I don&#8217;t make it on Thanksgiving anymore, I do make it whenever someone has a stuffy head or scratchy throat or needs warming from the inside out. \u00a0It was perfect this week in New York when we had single digit temperatures. Add or subtract honey (I like it pretty sweet) or substitute agave or maple syrup, if it tastes better to you.<\/span><\/p>\n<p><span style=\"color: #333333;\">GINGER TEA<\/span><\/p>\n<p><span style=\"font-weight: 400; color: #333333;\">A big (3&#8243;) knob of ginger, (skin scraped off with a spoon so you don&#8217;t lose a lot of flesh) &#8211; about 1\/2 cup packed<\/span><\/p>\n<p><span style=\"font-weight: 400; color: #333333;\">1\/2 cup honey (I like raw wildflower here but any will do)<\/span><\/p>\n<p><span style=\"font-weight: 400; color: #333333;\">Juice from 1 &#8211; 2 lemons, depending on how juicy they are &#8211; about 1\/4 cup\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400; color: #333333;\">5 cups of water<\/span><\/p>\n<p><span style=\"color: #333333;\">Coarsely grate ginger into a saucepan and cover with the water. (If you are in a big hurry, you can simply slice the ginger but it won&#8217;t be as strong)<\/span><\/p>\n<p><span style=\"color: #333333;\"><img decoding=\"async\" class=\"aligncenter size-medium wp-image-55\" src=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/2016\/02\/P1010515-300x225.jpg\" alt=\"P1010515\" width=\"300\" height=\"225\" srcset=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/2016\/02\/P1010515-300x225.jpg 300w, http:\/\/www.agooddish.com\/wp-content\/uploads\/2016\/02\/P1010515-768x576.jpg 768w, http:\/\/www.agooddish.com\/wp-content\/uploads\/2016\/02\/P1010515-1024x768.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/span><\/p>\n<p><span style=\"font-weight: 400; color: #333333;\">Bring to a boil and then turn down to simmer for 10 &#8211; 15 minutes. \u00a0Turn off heat and let sit for 5 minutes. (If your head is stuffy, cover your head with a towel over the pot and breathe in the steam once you turn off the burner &#8211; just don&#8217;t get too close or you will burn your nose!)<\/span><\/p>\n<p><span style=\"color: #333333;\">Add honey and stir to dissolve.<\/span><\/p>\n<p><span style=\"font-weight: 400; color: #333333;\">Stir in lemon juice and strain tea into cups. \u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400; color: #333333;\">Sip while steaming.<\/span><\/p>\n<figure id=\"attachment_54\" aria-describedby=\"caption-attachment-54\" style=\"width: 300px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-54 size-medium\" src=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/2016\/02\/P1010521-e1455564462191-300x279.jpg\" alt=\"P1010521\" width=\"300\" height=\"279\" srcset=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/2016\/02\/P1010521-e1455564462191-300x279.jpg 300w, http:\/\/www.agooddish.com\/wp-content\/uploads\/2016\/02\/P1010521-e1455564462191-768x715.jpg 768w, http:\/\/www.agooddish.com\/wp-content\/uploads\/2016\/02\/P1010521-e1455564462191-1024x953.jpg 1024w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><figcaption id=\"caption-attachment-54\" class=\"wp-caption-text\"><\/span> <span style=\"color: #333333;\">mug by Ayumi Horie<\/span><\/figcaption><\/figure>\n<p><span style=\"color: #333333;\">If you have some left and want to reheat it, don&#8217;t boil &#8211; just heat until it starts to move so you don&#8217;t overcook the honey and lemon. \u00a0This tea stores well in a glass jar overnight in the refrigerator and tastes so good re-warmed in the morning.\u00a0<span style=\"font-weight: 400;\">It\u00a0is also delicious mixed into tea, especially green, about half ginger mixture and half tea, cold, as a bracing ginger lemonade or as a replacement in a mixed cocktail for ginger beer. <\/span><\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>The first Thanksgiving I didn&#8217;t travel home to see my family, a friend joined me to cook a meal. \u00a0Neither of us knew much about cooking but she brought some store-prepared food and I think I managed to compose a salad.
