The sunny color is perfect for brightening these short days and long nights! I have tried many versions over the years since I made my first one from a boxed Jiffy mix as a teenager. People have strong feelings about the right way to make <a href=\"https:\/\/en.wikipedia.org\/wiki\/Cornbread\">cornbread<\/a>. Some say sweet while others insist on no sweetener. Some use half flour half cornmeal while others are cornmeal-only purists. Finely ground corn flour, as <a href=\"https:\/\/www.bostonglobe.com\/2020\/06\/30\/lifestyle\/recipe-late-edna-lewis-one-great-american-chefs-made-her-cornbread-cast-iron-skillet\/\">Edna Lewis<\/a> preferred, vs. coarse corn grits or polenta. Add corn kernels, cheese or green chilies? On the east coast there is <a href=\"https:\/\/mainegrains.com\/product\/organic-yellow-flint-cornmeal\/\">Maine Grains<\/a>, <a href=\"http:\/\/www.farmergroundflour.com\/retail\/wholesale\">Farmer Flour<\/a>, <a href=\"https:\/\/ansonmills.com\/products\">Anson Mills<\/a> and <a href=\"https:\/\/marshhenmill.com\/collections\/pantry\/products\/yellow-cornmeal\">Marsh Hen Mill<\/a>, among many others. Our local place, <a href=\"http:\/\/www.graysgristmill.com\/store\/\">Gray\u2019s Grist Mill<\/a>, stone grinds flint corn, both white and yellow, and does mail order. Use white or yellow (or blue or red if you can find it), finely or coarsely ground &#8211; just make sure it is fresh. And whatever you don\u2019t use, store in the <a href=\"https:\/\/www.gcca.org\/resources\/industry-topics\/what-are-proper-conditions-storing-corn-meal-or-corn-flour\">freezer<\/a> until you bake again.<\/span><\/p>\n<figure id=\"attachment_2579\" aria-describedby=\"caption-attachment-2579\" style=\"width: 504px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"size-full wp-image-2579\" src=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/baked-cornbread.jpeg\" alt=\"\" width=\"504\" height=\"512\" srcset=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/baked-cornbread.jpeg 504w, http:\/\/www.agooddish.com\/wp-content\/uploads\/baked-cornbread-295x300.jpeg 295w\" sizes=\"(max-width: 504px) 100vw, 504px\" \/><figcaption id=\"caption-attachment-2579\" class=\"wp-caption-text\"><span style=\"color: #333333;\">Cornbread bakes up especially well<\/span><br \/><span style=\"color: #333333;\">in cast iron pans<\/span><\/figcaption><\/figure>\n<p><span style=\"color: #333333;\">I make my cornbread without flour because because, after all, it is corn bread and not cake. If you want it lighter and cake-like, use half cornmeal and half flour. There are endless recipes, many collected in Crescent Dragonwagon&#8217;s\u00a0<em><a href=\"https:\/\/www.goodreads.com\/en\/book\/show\/766125.The_Cornbread_Gospels\">The CornBread Gospels<\/a>, <\/em>in which she lays out Northern vs. Southern cornbread plus the sweet vs. unsweetened debate.<\/span><span style=\"color: #333333;\">\u00a0Sometimes I add some <a href=\"https:\/\/en.wikipedia.org\/wiki\/Date_sugar\">date<\/a> or maple sugar and other times I don\u2019t sweeten at all. I like to use whole or buttermilk but any kind of milk, even plant milks, work. (If using buttermilk, substituting a little baking soda for some of the baking powder will prevent sourness).You can even use half milk and half cream, if you want it richer. I can\u2019t bring myself to use lard but people do. I find the butter adds plenty of flavor and crispness. Add oregano, thyme, diced chilis, dried cranberries, cherries or diced apricots, corn kernels or diced cheese if you want to vary the taste. For a really sweet treat, slather the top with honey or maple butter as soon as the hot pan comes out of the oven. You can serve it plain or topped with butter while still warm. It is a great accompaniment to bean dishes, chilis, stews and salads, makes delicious Thanksgiving stuffing and can stand alone as an easy breakfast when warmed or toasted, perhaps<span class=\"Apple-converted-space\">\u00a0 <\/span>with a spreadable soft cheese (I am thinking baked farmer, ricotta or cream cheese) and jam. And cornbread makes a great ham or turkey sandwich, spread with mustard, cranberry sauce or <a href=\"https:\/\/en.wikipedia.org\/wiki\/Pepper_jelly\">pepper jelly<\/a> and topped with fresh greens. And although you can make cornbread in any baking pan, a cast iron skillet is best for holding heat. You want the pan hot to make the batter sizzle when it comes in contact with the bubbling melted butter to achieve a crunchy crust. Just thinking about it is making my mouth water.<span class=\"Apple-converted-space\">\u00a0<\/span><\/span><\/p>\n<figure id=\"attachment_2578\" aria-describedby=\"caption-attachment-2578\" style=\"width: 612px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"size-full wp-image-2578\" src=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/cornbread-pieces.jpeg\" alt=\"\" width=\"612\" height=\"654\" srcset=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/cornbread-pieces.jpeg 612w, http:\/\/www.agooddish.com\/wp-content\/uploads\/cornbread-pieces-281x300.jpeg 281w\" sizes=\"(max-width: 612px) 100vw, 612px\" \/><figcaption id=\"caption-attachment-2578\" class=\"wp-caption-text\"><span style=\"color: #333333;\">Yellow cornbread pieces<\/span><br \/><span style=\"color: #333333;\">White and blue bowl by Wendy Goldsmith<\/span><\/figcaption><\/figure>\n<p><span style=\"color: #333333;\">CORNBREAD<span class=\"Apple-converted-space\">\u00a0<\/span><\/span><\/p>\n<p><span style=\"color: #333333;\">Preheat your oven to 400F and place an 9\u201d cast iron skillet in the oven to heat.<\/span><\/p>\n<p><span style=\"color: #333333;\">Place dry ingredients in a mixing bowl and whisk to combine:<\/span><\/p>\n<ul>\n<li><span style=\"color: #333333;\">2 1\/2 cups stone ground yellow or white cornmeal<\/span><\/li>\n<li><span style=\"color: #333333;\">1 1\/2 tsps baking powder<\/span><\/li>\n<li><span style=\"color: #333333;\">1 1\/2 tsp sea salt<\/span><\/li>\n<li><span style=\"color: #333333;\">1-2 TBs maple, date or white sugar, optional<\/span><\/li>\n<li><span style=\"color: #333333;\">Beat together in a separate bowl:<\/span><\/li>\n<li><span style=\"color: #333333;\">2 eggs<\/span><\/li>\n<li><span style=\"color: #333333;\">2 cups milk or buttermilk (if buttermilk, use 1\/2 tsp baking soda and 1 tsp baking powder)<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #333333;\">With a potholder, carefully remove the hot skillet from the oven, set in a safe place and add 2-3 TBs butter.<\/span><\/p>\n<p><span style=\"color: #333333;\">While the butter is melting, whisk the wet ingredients into the dry.<\/span><\/p>\n<p><span style=\"color: #333333;\">When the butter is starting to brown and bubbling (don\u2019t let it burn and don\u2019t burn yourself)), pour about half of it in the batter, mix in and pour the batter into the hot skillet (it should sizzle) and then place the skillet in your preheated oven.<\/span><\/p>\n<p><span style=\"color: #333333;\">Bake 25-30 minutes, until starting to brown and coming away from the sides.<\/span><\/p>\n<p><span style=\"color: #333333;\">Either invert the cornbread to serve crunchy side up or slice into wedges or squares and serve right away.
