Did you wonder what I did with the fennel bulbs I had left after trimming all the fronds? I like <a href=\"https:\/\/www.food.com\/recipe\/sauteed-fennel-100000\">saut\u00e9ed<\/a> and <a href=\"https:\/\/www.marthastewart.com\/337827\/roasted-fennel\">roasted<\/a> fennel but since fresh local lettuce is harder to find as the days get shorter, I decided to use the fennel for salad.<\/span><\/p>\n<p class=\"Body\"><span style=\"color: #333333;\">My usual fennel salad is a toss of many vegetables. It is reliable and keeps well for several days. This week I didn\u2019t have a lot of vegetables in my fridge but I did have a bag of lovely Bosc pears. I added some celery and walnuts and tossed the whole thing with a balsamic vinaigrette. It was so good that my husband and I couldn\u2019t stop eating it! Fortunately, with two bulbs of fennel in the mix, even our enthusiastic chow down left us enough for another meal.<\/span><\/p>\n<figure id=\"attachment_2200\" aria-describedby=\"caption-attachment-2200\" style=\"width: 720px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"size-full wp-image-2200\" src=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/fennel-chopped.jpeg\" alt=\"\" width=\"720\" height=\"589\" srcset=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/fennel-chopped.jpeg 720w, http:\/\/www.agooddish.com\/wp-content\/uploads\/fennel-chopped-300x245.jpeg 300w\" sizes=\"(max-width: 720px) 100vw, 720px\" \/><figcaption id=\"caption-attachment-2200\" class=\"wp-caption-text\"><span style=\"color: #333333;\">Pear and walnuts<\/span><br \/><span style=\"color: #333333;\">complement the fennel<\/span><\/figcaption><\/figure>\n<p class=\"Body\"><span style=\"color: #333333;\">Fennel is actually quite <a href=\"https:\/\/www.google.com\/search?client=safari&amp;rls=en&amp;q=fennel+nutrition+data&amp;ie=UTF-8&amp;oe=UTF-8\">nutritious<\/a>, full of fiber and potassium (to balance sodium). It has a good crunch and can keep well in the fridge for almost a week until you find time to use it. It might even taste better on the second day. I kept the ingredients pretty basic but you could tart it up with some orange segments or chopped apple instead of pear or toss in some dried cranberries or raisins. Add Parmesan or some variety of blue or goat cheese to make a whole meal out of this salad if you like, but it is pretty good all on its own.<\/span><\/p>\n<figure id=\"attachment_2199\" aria-describedby=\"caption-attachment-2199\" style=\"width: 829px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"size-full wp-image-2199\" src=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/fennel-down-e1605120002674.jpeg\" alt=\"\" width=\"829\" height=\"717\" srcset=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/fennel-down-e1605120002674.jpeg 829w, http:\/\/www.agooddish.com\/wp-content\/uploads\/fennel-down-e1605120002674-300x259.jpeg 300w, http:\/\/www.agooddish.com\/wp-content\/uploads\/fennel-down-e1605120002674-768x664.jpeg 768w\" sizes=\"(max-width: 829px) 100vw, 829px\" \/><figcaption id=\"caption-attachment-2199\" class=\"wp-caption-text\"><span style=\"color: #333333;\">Fennel salad<\/span><br \/><span style=\"color: #333333;\">Porcelain bowl by <a href=\"https:\/\/thebrightangle.com\/pages\/about-story\">The Bright Angle<\/a><\/span><\/figcaption><\/figure>\n<p class=\"Body\"><span style=\"color: #333333;\">REALLY EASY FENNEL SALAD<\/span><\/p>\n<p class=\"Body\"><span style=\"color: #333333;\">Combine in a large bowl:<\/span><\/p>\n<ul>\n<li class=\"Body\"><span style=\"color: #333333;\">2 bulbs of fresh fennel, quartered lengthwise, cored and thinly sliced<\/span><\/li>\n<li class=\"Body\"><span style=\"color: #333333;\">1 cup raw or lightly toasted walnut pieces<\/span><\/li>\n<li class=\"Body\"><span style=\"color: #333333;\">2 pears, preferably Bosc, cored, quartered and thinly sliced<\/span><\/li>\n<li class=\"Body\"><span style=\"color: #333333;\">1\/2 cup chopped parsley<\/span><\/li>\n<\/ul>\n<p class=\"Body\"><span style=\"color: #333333;\">Mix together:<\/span><\/p>\n<ul>\n<li class=\"Body\"><span style=\"color: #333333;\">3 TBs balsamic vinegar<\/span><\/li>\n<li class=\"Body\"><span style=\"color: #333333;\">3 TBs olive oil<\/span><\/li>\n<li class=\"Body\"><span style=\"color: #333333;\">Big pinch each of salt and pepper<\/span><\/li>\n<\/ul>\n<p class=\"Body\"><span style=\"color: #333333;\">Pour dressing over vegetables, toss and serve.<\/span><\/p>\n<p class=\"Body\"><span style=\"color: #333333;\">This salad will keep refrigerated for 3 or 4 days.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Fennel fronds, as we recently discovered, make a wonderful pesto.
