Our challenge now, beyond staying well and at home, is how to cook daily meals while doing as little grocery shopping as we can. You\u2019ll be surprised, I think, just how far your current supplies can go. If you didn\u2019t manage to shop before, delivery and mail order are still options. Many grocery, big box and online stores will deliver, (although it may not be immediate with the current demands), so even if you can\u2019t get out, you can get groceries. Check with your local grocer.<\/span><\/p>\n<p><span style=\"color: #333333;\">A few weeks ago, I suggested some foodstuffs to have on hand and some to make ahead to put away. Sometimes the most comforting foods are the simplest to make. Rice or pasta with just butter and salt or olive oil and garlic is so delicious. Ramp it up with frozen peas or arugula, add some beans, frozen shrimp, tinned tuna, anchovies or cheese and herbs and, well, yum yum! Nourishing soups can be particularly soothing both to make and to eat<\/span>.<\/p>\n<figure id=\"attachment_1994\" aria-describedby=\"caption-attachment-1994\" style=\"width: 714px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"size-full wp-image-1994\" src=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/nachos-e1585234605769.jpg\" alt=\"\" width=\"714\" height=\"604\" srcset=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/nachos-e1585234605769.jpg 714w, http:\/\/www.agooddish.com\/wp-content\/uploads\/nachos-e1585234605769-300x254.jpg 300w\" sizes=\"(max-width: 714px) 100vw, 714px\" \/><figcaption id=\"caption-attachment-1994\" class=\"wp-caption-text\"><span style=\"color: #333333;\">Bean and salsa nachos<\/span><\/figcaption><\/figure>\n<p><span style=\"color: #333333;\">Except for the occasional walk while trying to stay away from others, we have been holed up in our apartment for almost 2 weeks. I\u2019ve been trying to make simple but nutritious meals in large enough quantities that we can alternate eating leftovers and freshly cooked meals. To share some ideas, this is what I\u2019ve made in the past week:<\/span><\/p>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li><span style=\"color: #333333;\">Lentil Soup with a green salad (<em>The Washington Post<\/em> recently had a particularly good <a href=\"https:\/\/www.washingtonpost.com\/news\/voraciously\/wp\/2020\/03\/08\/this-lentil-soup-is-so-good-one-nurse-has-eaten-it-for-lunch-every-workday-for-17-years\/\">recipe<\/a>)<\/span><\/li>\n<li><span style=\"color: #333333;\">Lemon garlic butter baked fish with saut\u00e9ed broccoli and baked sweet potatoes<\/span><\/li>\n<li><span style=\"color: #333333;\">Nachos made with a can of beans, jar of salsa, shredded pepper jack and sliced pickled jalape\u00f1os served with carrot and cucumber sticks<\/span><\/li>\n<li><span style=\"color: #333333;\">Cavatappi pasta with the <i>Bon Appetit<\/i> <a href=\"https:\/\/www.bonappetit.com\/recipe\/kale-pesto-with-whole-wheat-pasta\">kale pesto<\/a> recipe alongside a fennel salad<\/span><\/li>\n<li><span style=\"color: #333333;\">Vegetarian chili (my riff on Lucinda Scala Quinn\u2019s <a href=\"https:\/\/www.marthastewart.com\/318747\/chili\">much loved recipe<\/a> from <i>Mad Hungry<\/i>) made with gorgeous beans from Rancho Gordo, yellow rice and kale<\/span><\/li>\n<li><span style=\"color: #333333;\"><a href=\"http:\/\/www.agooddish.com\/?p=989\">Split pea soup<\/a> with <a href=\"http:\/\/www.agooddish.com\/?p=1053\">roasted parsnips<\/a> for munching on the side<\/span><\/li>\n<li><span style=\"color: #333333;\"><a href=\"http:\/\/www.agooddish.com\/?p=1204\">Bean salad<\/a> made with chopped raw veggies and scarlet runner beans, also from Rancho Gordo (my favorite source of beans), with a garlicky vinaigrette<span class=\"Apple-converted-space\">\u00a0<\/span><\/span><\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<figure id=\"attachment_1992\" aria-describedby=\"caption-attachment-1992\" style=\"width: 577px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"size-full wp-image-1992\" src=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/bean-salad-close-e1585234429286.jpg\" alt=\"\" width=\"577\" height=\"442\" srcset=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/bean-salad-close-e1585234429286.jpg 577w, http:\/\/www.agooddish.com\/wp-content\/uploads\/bean-salad-close-e1585234429286-300x230.jpg 300w\" sizes=\"(max-width: 577px) 100vw, 577px\" \/><figcaption id=\"caption-attachment-1992\" class=\"wp-caption-text\"><span style=\"color: #333333;\">Easy bean salad with chopped veggies<\/span><\/figcaption><\/figure>\n<p><span style=\"color: #333333;\">Other recipes waiting to be made are <a href=\"http:\/\/www.agooddish.com\/?p=1647\">wild rice salad<\/a> with nuts and dried cherries, <a href=\"http:\/\/www.agooddish.com\/?p=1810\">black bean soup<\/a> with cornbread, vegetable nori rolls with <a href=\"http:\/\/www.agooddish.com\/?p=1733\">miso soup<\/a> and edamame from the freezer, <a href=\"http:\/\/www.agooddish.com\/?p=461\">stir-fried rice<\/a> with leftover or frozen vegetables and dosas with a spicy potato filling. (Tejal Rao recently published a very good, <a href=\"https:\/\/cooking.nytimes.com\/recipes\/1020908-dosa\">easy dosa recipe<\/a> in <em>The<\/em> <em>New York Times<\/em> and it only has a few ingredients if you want to give it a try). After that, my son and I have big plans to try making sourdough bread, pizza dough and crackers. In fact, we started our yet-to-be-named starter yesterday. Frozen salmon burgers with <a href=\"http:\/\/www.agooddish.com\/?p=1920\">kimchi<\/a>, vegetable dumplings with dipping sauce and a shredded <a href=\"http:\/\/www.agooddish.com\/?p=1561\">cabbage salad<\/a>, grilled cheese sandwiches with baby carrots and mushroom ravioli with a little butter and any green left in the fridge as well as the above mentioned pasta or rice. Dried fruit will make a tasty <a href=\"http:\/\/www.agooddish.com\/?p=423\">compote<\/a> as well as take the place of fresh fruit in yogurt and smoothies (soaked first to reconstitute) if need be. My pal Dale, in Maine, just sent photos of her delicious looking sheet pan pizza while my neighbor, Reva, told me her family was tackling pot pie. In Brooklyn, my friend Esther has been baking banana and pumpkin breads. Anne, in DC, made the above mentioned lentil soup recipe and loved it so much she sent it to me. Not only do we have more time now to cook but cooking can be very grounding and comforting. What are you eating while home bound? Share your favorites with the rest of us! It is a very strange moment we find ourselves in right now but perhaps we can use the time to try a new recipe or prepare an old favorite to nurture our families and ourselves.
