One summer I ate so many that my hands turned orange, a garish but harmless\u00a0condition. I&#8217;ve moderated my intake since then but still love to munch them. The crunch and sweetness make a satisfying snack and they improve almost any salad.<\/span><\/p>\n<p><img decoding=\"async\" class=\"alignnone wp-image-1078 size-full\" src=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/radish-half-e1487793694171.jpg\" width=\"533\" height=\"581\" srcset=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/radish-half-e1487793694171.jpg 533w, http:\/\/www.agooddish.com\/wp-content\/uploads\/radish-half-e1487793694171-275x300.jpg 275w\" sizes=\"(max-width: 533px) 100vw, 533px\" \/><\/p>\n<p><span style=\"color: #333333;\">A carrot salad is one of the easiest salads to make (similar, in fact, to the raw beet salad I posted last month). Simply grate, thinly slice (on a mandolin), use a peeler to shave into strips or julienne carrots into thin matchsticks for the bulk of your salad. Add in some diced or sliced watermelon radish or jicama for crunch, grated ginger if you like spice, pumpkin or sunflower seeds or walnuts for protein and flavor, parsley, mint or cilantro for herbaciousness and apple, pear, persimmon, pineapple, currants or diced dried apricots for sweetness. Toss it all with a lemony or orange vinaigrette and you have a salad you can eat for several days running. Magic!<\/span><\/p>\n<figure id=\"attachment_1077\" aria-describedby=\"caption-attachment-1077\" style=\"width: 756px\" class=\"wp-caption alignnone\"><img decoding=\"async\" class=\"size-full wp-image-1077\" src=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/julienned-carrot-salad-e1487793591613.jpg\" alt=\"\" width=\"756\" height=\"568\" srcset=\"http:\/\/www.agooddish.com\/wp-content\/uploads\/julienned-carrot-salad-e1487793591613.jpg 756w, http:\/\/www.agooddish.com\/wp-content\/uploads\/julienned-carrot-salad-e1487793591613-300x225.jpg 300w\" sizes=\"(max-width: 756px) 100vw, 756px\" \/><figcaption id=\"caption-attachment-1077\" class=\"wp-caption-text\"><span style=\"color: #333333;\">Julienned carrot salad with watermelon radish, bosc pear and currants<\/span><\/figcaption><\/figure>\n<p><span style=\"color: #333333;\">Carrot Salad<\/span><\/p>\n<ul>\n<li><span style=\"color: #333333;\">1 pound carrots, grated or cut as you please<\/span><\/li>\n<li><span style=\"color: #333333;\">1 medium watermelon radish or jicama, diced small<\/span><\/li>\n<li><span style=\"color: #333333;\">1 medium apple or pear, diced small<\/span><\/li>\n<li><span style=\"color: #333333;\">1\/4 cup currants or diced dried apricots (optional)<\/span><\/li>\n<li><span style=\"color: #333333;\">A big handful of chopped parsley, mint and\/or cilantro<\/span><\/li>\n<li><span style=\"color: #333333;\">A big handful of toasted pumpkin or sunflower seeds or chopped walnuts<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #333333;\">Whisk together:<\/span><\/p>\n<ul>\n<li><span style=\"color: #333333;\">1\/4 cup freshly squeezed lemon juice (1-2 lemons)<\/span><\/li>\n<li><span style=\"color: #333333;\">2-3 TBs olive oil<\/span><\/li>\n<li><span style=\"color: #333333;\">Big pinch of salt and of black pepper<\/span><\/li>\n<li><span style=\"color: #333333;\">Splash of rice or sherry vinegar (optional)<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #333333;\">Toss all together and let sit at least one hour or overnight.<\/span><\/p>\n<p><span style=\"color: #333333;\">6-8 servings and keeps in the refrigerator 3-4 days.<\/span><\/p>\n<p><span style=\"color: #333333;\">Works well as a lunch box salad or in a sandwich or pita (in place of lettuce and tomato) alongside leftover chicken or fish or cheese or baked tempeh or tofu in either case.<\/span><\/p>\n<p><span style=\"color: #333333;\">For a complete lunch, just add feta, goat or mozzarella cheese or cooked chickpeas.
